George T. Morgan created the design for the Morgan silver dollar, during his time as assistant engraver for the US Mint. George started his career in England but soon moved and worked at the US Mint for 40 years before being donned Chief Engraver for the Mint. He designed other coins too, though the Morgan was after his namesake and what he is famous for. Lady Liberty is always included on American silver dollars but usually with her whole body in the frame. George designed Liberty with an up close view of her side profile. An eagle with outstretched wings is included on the reverse since eagles have also always being included on US currency. Your 1881-S Morgan Silver dollar is 90% silver and is considered to be in almost uncirculated condition. Certain features of an AU coin can vary but some things are certain you can expect, such as the wear on Lady Liberty's cheeks or the broken luster from rim to rim.
